“ Il Veliero “ (‘The Tall Ship’ in Italian) is Waterford city’s newest restaurant and has opened with the pledge of bringing something new, innovative and distinctly Italian to the local dining populous. Crossing its threshold the William Street eatery, which exudes relaxation, welcome and tradition, literally transports one from the world you’ve left behind.
Il “Veliero “ is the new project of Mr. Paolo Fresilli, President of the Italian Chefs Federation of Ireland and from Mr. Gino Malocca the popular Southeast businessman,well known for his involvement in Italian style enterprises, such as his company Ital Living, Importers of Italian lighting and furniture, and his sucsessful Enniscorthy business Malocca’s Fine Foods.“Il Veliero “ is part of a dream , to realize in Waterford, a city rich in culture, history and different life styles, a small portion of Italy in a special authentic Italian style similar to that experienced at Mr.Fresilli’s Via Veneto in Enniscorthy. For this reason Mr. Fresilli and Mr. Malocca decided to choose an all Italian staff from different Italian regions.
From the hustle and bustle of city life, guests at Il Veliero are ferried to the foothills of Calabria, the fertile plains of Emilia-Romagna and the sweeping landscapes of Tuscany. There are 18 other Italian regional scents to be sampled, savoured and blended, so variety, as well as quality in the

restaurant’s menu, is guaranteed. And it’s why crossing this restaurant’s threshold is something guests will do over and over again.
Il Veliero represents more than a mere break from the norm, it’s a slice of Italy in the middle of Ireland’s oldest city. And you don’t just eat Italian cuisine here – you experience it, savour it and relish it, unwinding with every passing moment spent there.
Food is history, culture, and each single Italian region can be found directly at “ IL Veliero “For this reason , in association with the Italian federation of Chefs in Ireland , they decided to choose to offer this ambitious project to the Executive Chef Giorgio Trovato. Young but popular for his creativity and new interpretation of Italian traditional food, his cuisine has a respect for quality and tradition without any compromise!
Mr. Trovato is widely recognised for his work as consultant chef to the most important restaurants in Italy & other parts of the world, for him hospitality is the basis for a good service, to give to the Guest of “ Il Veliero “ a new point of view about Italian culture. Chef Giorgio is also the manager of “ Il Veliero “ and in collaboration with Mr. Fresilli , also executive chef , they chose an all-Italian staff who have been trained in some of
their native country’s finest cooking
establishments, bringing with them all the components essential to the traditional

Italian eating experience.
In the kitchen, Chef Trovato directs staff including Sous Chef Mr. Simone di Murro from Rome and chef Simone Semplici from Tuscany .
Mr.Salvatore Messina from Sicily is the maitre of this restaurant with career experiences in Italy ,the U.K and Belgium, he is ably supported by Chef de Rang Miss. Valentina Schirru also from Sicily The aroma, atmosphere and ambience of a traditional Italian kitchen oozes through the very brickwork of this restaurant. The music playing softly in the background is Italian. The wine (with 70 different types stocked) is Italian and served directly by Sommelier Mr. Sandro Di Murro, who will advise on wines to compliment the food selection, at Il Veliero it is important to taste wine and not just to drink it.
The hands that make the food you eat at Il Veliero are Italian, for this is a restaurant which makes no compromises when it comes to tradition and quality of both cuisine and service.

Mariangela Tarola , chef de rang, is present to provide suggestions on the weekly wines, again a selection of wines to fully compliment the food selection directly from the “ Il Veliero “ When ordering at Il Veliero, everything is cooked from that moment on and that moment only. It’s part of its kitchen’s commitment to excellence. Not only that, it’s also proof of what food critic Paolo Tullio described as this restaurant management’s commitment to keep everything “determinedly authentic” in evidence at its Via Veneto restaurant in Enniscorthy.
“I had a really fine Italian meal,” he
wrote after eating there in July 2007. “Just to be clear, when I say an ‘Italian meal’, I mean a meal like you’d get in a restaurant in Italy”. And that’s exactly what Waterford diners can now also

enjoy on William Street, replicating the Via Veneto experience which Tullio described as “precise, exact, honest and true to the original recipe”.
